I am thinking of turning the offer down saying I have something else to do and propose another day - if she's in the mood.

There are two reasons

1) I suspect she wants to friend-zone me, if a girl sees a guy as potential boyfriend she wants to see him alone, right?
2) I suspect there is another guy she wants to make jealous and plans to use me as a jealousy tool... and I love the idea of wrecking her plan

Not necessarily for number 1. She could be screening you as a boyfriend by checking to see if her friends like you. As men we really only put ourselves in the friend zone by not showing action or property interest and maybe the chick just may not be into you. But you can change that.

Yea try something more on your terms, something with just her so you can see her and not the social mask she may put on around her friends.
