One question I've been wondering about lately is when should a couple become "exclusive". Girls seem to want it immediately even before going into anything official like boyfriend/girlfriend, but I was under the impression that until both people committed in that fashion then it's not a problem yet? So the question is at what point in a relationship before two people become officially together should I stop meeting, dating and seeing other women?

You should stop meeting, dating, and seeing other women when you become officially together. =)

Until she is officially your "girlfriend," you are not in a committed relationship and there is absolutely no reason to stop seeing other women.

How would you handle her thinking the two of you were until it actually is official? For some reason I've run into this issue lately and if/when they find out i'm seeing someone else it ends not so well :)
