first part of this is great. ballsy and original and she seemed up for it, from your description. IMO where you went wrong was not following up from the friday text conversation:

why leave it there and wait till after the weekend to reply? why not continue here, attempt to set something up as soon as? you left it 5 days before asking about her schedule. from then it was ok but come sunday you took the 'flake' personally. just from the info provided the flake seemed genuine, she had to work overtime or whatever, no big deal. and it wasn't really a flake. she was letting you know 90 minutes before that she wouldn't be able to make it. you could have rescheduled or postponed an hour.
