This is what i struggle with most, and can't seem to calibrate it to the right amount.

Before i go out, i usually do my workout, drink 2 cans of red bull and become exactly like this guy:

Trouble is, it gets me worse results than if i go out all timid and unsure with myself. When i act all shy, girls think it's so cute and sweet and i usually get their number. When i act and compliment them with confidence and arrogance, girls don't seem to want to talk.

If possible, could someone describe (or post a video) what would be a good balance between confidence/arrogance and shy-ness?

Firstly, how many of these women are sleeping with you when you are the shy sweet guy...

The question about being too cocky, I think its related to the energy you give off. So like in that video you posted, its good that he is confident (I couldn't listen with audio as in work) in his body language but he is in a relaxed energy place using high energy.

If you are looking for a reference point I like Damon from The Vampire Diaries, he says cocky things with relaxed non-verbals and tone, only putting energy into the facial expressions (changing eye focus/intensity after a witty remark). Hope it helps and I will be interested to hear what others think.

This is a very good question.
The fine difference between the two is simply: "Your Use of Words, and Your Tone of Voice"

What you want is to speak slowly, clearly, but sound genuine. When you compliment, make sure you really mean it.
When you are making a joke or teasing, make sure you are smiling and have a little giggle.

Girls don't like sarcasm, they don't like rudeness, they don't like to see a "know it all" attitude.

In fact, talking less, and listening more will make you go a long way in life. Be genuinely interested in what they are talking about, even if it bores you.

Choose your words wisely... and yea, Red bull is bad for you. I would avoid drinking high caffiene. ;)
