There is this new girl that I've been texting recently but I'm unsure of how she feels towards me (friend or more type of thing). Should I just ask her to do something one night and see what she says or is there a better approach?

Whizzy,

Asking the girl out and seeing if she accepts and complies is always the best way to find out. Attempting to build too much rapport will either drop her attraction for you or potentially put you in the boyfriend zone.

You know the drill: move quickly. ;)

What if the girl tries to immediately put you in the friend zone on the first text?

"Sure, I'd love to go out and get to know you better, but just as friends"

Yet when I first opened her, she was laughing and being flirty?

If she was receptive of you as being the sexy guy on the first meet, Like Franco said, move quickly. :) Otherwise, guess you have to take the boyfriend terrain, if you have landed there already somewhat.

"I thought we were friends already?" and if she responds, in a way very cold and demeaning, or neutral, she likely didn't like you that much.

Well she said the worst words you ever want to hear as a guy, "I think you're a chill guy and nice to talk to". So I'm thinking of just dropping her altogether or maybe to keep talking to her to practice persuasion.

@ Whizzy-

Just get her out. If you must respond to "I think you're a chill guy," respond with something like, "Obviously, you need to get to know me a bit better," to spark some intrigue and make yourself sound like a bad boy.

@ Vash-

Reply with, "Hey now, no need to rush into this whole 'friends' thing, I'm not sure if I'm ready for a big step like that yet ;) What's your schedule like over the next week or so, miss?"

Better to turn this one around so it feels like she's chasing and being unreasonable. There's also a little bit of making her feel awkward for talking about "friends"... but just a little bit. Not enough to turn her off, just enough to discourage that behavior.
