I've read that when Chase meets a woman who is a potential girlfriend and someone to invest time in for a relationship, that he wants to grow and learn from that woman and he in return helps her grow and "challenges" her. Any idea what "challenges" means here?

Challenge is the opposite of Support.
You can challenge her certain beliefs, by debating about say.. morals, religion, political views etc.
You can even challenge them verbally with witty comments when she makes a statement.
When you challenge a girl, it just means not allowing them to have their way "easily", not treating them like a princess and not giving in to them.
However, you MUST have a fine balance of support. If you challenge her on one thing, make sure you show support on another to show her that you're still on her side.

The idea is to not agree with everything she says. Have your own fucking opinion stick to it even if you're wrong.
