I spoke with this girl who goes to my university for the first time at the grocery store about a month ago. She told me a little about her sister and how her sister is in college. I spoke with this girl again about a month later and asked how her sister was doing at (X) college.

I didn't realize it at the time but would a girl interpret a guy remembering something like that as creepy/stalkerish? I honestly just have a good memory on certain conversations I have. I wasn't trying to come off as a stalker. Do girls appreciate guys remembering things like that or should I just avoid doing this stuff?

I don't think you came off as a creep, in fact I think you did the opposite. Girls love a guy who can listen, you did a good job listening, which is why you remember the conversation you had with her.

I just didn't want her to think that I'm sitting around thinking about her all day. I just have a good memory of spoken words and events. I can recall conversations I had with people well over 15 years ago very vividly.
