Her tactic: 'I'm a great cook! I'll cook for you sometime.'

So this girl I had initial drinks with on Wed nite was notably nervous and chatty, about halfway thru the night she hit me with the: "I love cooking, I'm a great cook, I'll make you dinner sometime!"

She nannies, and is from a big family so I suspect she was being 99% honest about her kitchen skills.

What's the optimal reply to her for a guy on the first date? I agreed with her and said that would be great and we transitioned to another topic seamlessly. [this has been said to me by other women as well over the years, probably common].

BUT, should I have suggested 2nd date at her place? Gently teased her about making cornflakes and toast? Pretended I was a famous French chef? Volunteered to pick up some ingredients? All of the above?

you ask her what is her best specialty, and then when she tells you "blah blah" you do a future projection and you say, oh i love that "blah blah" dish, i tell you what next time we meet i will bring/buy the "ingredients for the blah dish" and you cook.... if she agrees, then you have plausible deniability for her place or your place...

a good date brings a smile to your lips... and hers

A girl offering to cook for you is a long term girlfriend audition scenario. Whether she consciously means it as such is a moot question.

A girl acting out of her long term mentality means she will of course offer up her short term opportunities, but it comes with strings attached.

Is that what you want?

Smashing chicks that want you to be their boyfriend is easy. But she will have expectations.

If you don't care about carnage, ask her white or red. Within the offer to bring some wine is the implication of sex, so you don't need to press your point.

If you do care about the aftermath of her feeding you and then fucking you, you can playfully call her out on it, or you do so seriously.

Playfully - You cooking? I don't have three months salary saved up yet.

There's a lot of things to say here, but it's hard to put pause or rewind how she feels about you.
