Need help reading possibly interested female

So, I am brand new here and was looking for a little guidance. I do have experience but I am trying to tweak my game so I can become an expert when it comes to reading women. Right now I do get girls and have no problem talking to them but I sometimes fail with the more beautiful ones due to not being able to read the signs. I am 26.

I have just started talking with this new, very attractive (could get any guy type) girl and have approached her on 3 total occasions. the first 2 seemed to go well with a lot of questions from both of us and detailed responses from her. maybe 15min conversations. (note: although just started talking to her, we have seen each other multiple times this year due to working in same building, so we're strangers but not totally)

I decided I was going to ask her out for lunch on my third approach which is what I did. she said yes. I suggested a day and she agreed. Then unprompted she asks me for my number and says she will text me her number. She texts "its so and so!!!!"

Would you say that from the fact that she gave me her number without me even asking that I can deduce she is into me?

From what you are telling me, it sounds like she probably has many guys after her, and is socially experienced.
Giving out her number and arranging a date may just be a normal routine to her, and just an opportunity to get to know a new friend.
It doesn't mean shes into you sexually, but it does mean she is giving the both of you a chance to get to know each other more.

Its up to you to tighten up your fundamentals, and make sure you show her how different you are compared to other guys on the actual date.
