I am talking to this girl (from an app) online who, we haven't met yet by her pictures is quite hot. She is in a different city so we aren't meeting until I travel there, hopefully later this month. Her profile says 29, so probably in her 30s.

She asked for pics and I sent her one at a concert. She asked what music it was, and I said "Metal. What kind of music do you like?"

She comes back with the lamest possible answer, "A little bit of everything" which kind of wants to make me block her already (lol), except she's hot and up to now seemed legit and pretty friendly, but not super interested over text.

What's a good answer to this very lame reply to maximize my chance of getting her out if/when I go to her city?

she seems not into metal and she was socially calibrated to tell you that in way that help her save face "a bit overwhelming" you can agree, yeah is not for everyone, and change the subject..... Not all women are going to share a lot in common with a lot of guys, does not make the seduction impossible... most women will not be into "metal" is a niche music appealing to small demo... and most people listen to all types of music, usually when we get into topics i tell women "i like all types of music except country" but i even stop mentioning "country" because is popular with a lot of hot white girls now a days...
