I usually just let her go if she wants to go.

You didn't help things though by holding hands and stuff. Once you act like a boyfriend she starts looking at things differently, you are evaluated in a different way, and you can't really go back - even trying to go back can be seen as a fail.

Sounds like you need to be more of a leader in your relationships, make sure you know what you want and that she knows what the deal is. The end result of lack of leadership is either her getting messed around or you ending up in a relationship you didn't really want, neither of which is any good for anyone.
