After talking to a girl for a while I tried to set something up and she responded with:
"You do just want to talk right? Not just try to get me back to my place?"

What do you say to this kind of over defensiveness?

I don't know the extent or the context of what the two of you had said previously, what kind of conversations the two of you had had but Chases eBook talks about ways to deal with questions like that. Personally, I would say something like "Idk, I haven't decided yet =P" but the way I text women would allow me to say something playful like this. If possible, check out Chases eBook for alternate ways to handle it.

Decided to post from Chases eBook, the way social leaders, and veteran men handle challenges differs, but according to Chase, there are 4 main responses: challenging back, dismissal, self-deprecation, and invitation. Of the four, I tend to use all except the second.
Challenging back is when you respond to her question with a question which puts the ball back in her court, and you usually come off as an asshole or smartass.
Dismissal is simply continuing talking as if the challenge she made was never even mentioned in the first place.
Self deprecation is joking about something seemingly serious and it pokes fun of your own value.
Invitation is taking her challenge and using it as a stepping stone to get her to do something with you, and for your case, I would use this to benefit you.
She said "You do only want to talk right? Not just get me back to my place?"
You could say something like "Let's set something up and find out."

Obviously it depends on the context etc. as you said, Zphix, but I think your idea is good. It's playful, and leaves it open rather than stating anything outright.
